I LOVE tacos! I find a way to get creative with taco ideas so I can make them often. I’ve made savory, sweet, breakfast, and dinner tacos! Whether I’m using Organic Corn tortillas, Romaine lettuce leaves/butter lettuce cups, or tacos shells made out of Jicama, I’m making them and enjoying them!

This is great for a taco Tuesday, a get together, or any sort of event you’re attending or hosting. It’s pretty simple to put it all together and can even be made ahead of time so that all you have to do is warm up the ingredients again, assemble it when you’re guests arrive, or even place it out in bowls for guests to serve themselves. I especially like making this and not saying anything to my non-plant based friends and see why they think.

I am personally Gluten Free, so it is often easier for me to find tacos shells rather than find GF bread to make a sandwich, depending on where I am. I always have romaine at home, so it makes it pretty simple and minimally processed.

It’s pretty simple, I make pulled jackfruit, fill the taco shells with it, add creamy coleslaw, and top it with Avocado, and sometimes some hot sauce. I use to shred the jackfruit with a fork but then I got lazy, or maybe smart, haha, and started using my hands and it seemed to work just as well, or in my mind, faster and more efficiently. You can try both ways and see what works best for you.

Jackfruit is high in fiber, vitamin C, potassium, and is low in calories. Jackfruit is so versatile in cooking situations. I have become quite fond of using it for BBQs and get togethers with my family and friends that aren’t vegan, and also for my vegan peeps. You’re friends are going to love this! Jackfruit “Pulled” Tacos
(Servings about 8 tacos)

Pulled Jackfruit recipe
-8 or 10 GF Corn taco shells (for whole food plant based, use butter lettuce leaves, romaine leaves, cabbage, or thin round jicama slices.)
-2 Avocados
-2 Cups Cole slaw (about 1/4 cup per taco)

Instructions:
– Make the pulled jackfruit.
– Warm up tortillas or wash and prepare lettuce leaves.
– Add Jackfruit in the tacos first, then avocado, then coleslaw to top it off.

****If there are any other ingredients you’d like to add, such as, raw or cooked onions, hot sauce, tomatoes, or anything you desire, now is the chance.

-Serve and ENJOY!
